Cinnamon Apple Muffins
Cinnamon Apple Muffins is an moderately easy dinner. Made with 2 c. self-rising flour, 1 tsp. ground cinnamon, 2/3 c. firmly-packed light brown sugar, 2 eggs and 1/2 c. buttermilk, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 375 degrees. Grease a 12-portion standard size muffin pan. Sift together the flour, cinnamon, and brown sugar. In another bowl, combine the eggs, buttermilk, and oil. Beat until blended. Combine the two mixtures, stirring only until mixed. Do not beat with an electric mixer.
Stir in the apples. Spoon into prepared muffin tin, filling each section about 1/2 full. If you have batter leftover, spoon it evenly into the cups. Bake 18 to 20 minutes or until a toothpick comes out clean when inserted into center of a muffin.
Turn out of pan immediately. Good served warm with butter!
