Claudia's Green Chili Enchiladas
Claudia'S Green Chili Enchiladas is an moderately easy dinner. Made with 8 to 12 tortillas, 3 c. sharp cheddar cheese, 1 small onion (optional), 1 can old el paso green enchiladas sauce and 1 small can chopped green chilies, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Enchilada sauce, water (enough to rinse can) and juice from green chilies in a saucepan (big enough to hold a flat tortilla). Meanwhile, fry meat and pour grease off.
Add garlic, chili powder, salt and pepper to meat.
Get remaining ingredients ready and grease large ovenware dish.
Dip tortillas in 1/4-inch of hot oil.
Fry quickly on both sides (don't let it get crisp). Put in sauce.
Place on serving dish.
In middle tortilla, place cheese, and green chilies.
The tortilla end on bottom. Cover with remaining sauce, cheese and green chilies.
Bake in 300Β° oven for 30 minutes or microwave.
