Crunchy Peanut Cole Slaw
Crunchy Peanut Cole Slaw is an impressive dinner. Made with 3 c. finely chopped green cabbage, 1 c. finely chopped red cabbage, 1 c. finely chopped celery, 1 c. coarsely chopped cauliflower and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. Toss the green and red cabbage, celery and cauliflower together and chill in plastic bag.
Combine sour cream, mayonnaise, sugar, salt, vinegar, cucumber, green onion and green pepper for the salad dressing and chill thoroughly.
Melt butter in small skillet; add chopped peanuts and heat until lightly browned.
Remove from the heat and immediately stir in the Parmesan cheese.
Set aside to cool.
Just before serving, toss chilled vegetables with the dressing and top with the peanut mixture.
