Curry Lentils and Rice
Curry Lentils And Rice is an impressive dinner. Made with 1 onion, diced, 1 bell pepper, diced, 1/4 c. olive oil, 1 c. brown rice (or mixture of wild and brown) and 1 1/2 tbsp. mustard, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Saute onion, bell pepper and garlic in oil for 2 to 3 minutes. Add rice and stir until rice is coated.
Add mustard and stir. Add rest of ingredients, except water.
Stir; add water.
Simmer about 2 hours, check water level occasionally; add more water if mixture is too thick.
Simmer longer if too watery.
