Early Morning Pancakes is an moderately easy dinner. Made with 5 to 7 unpeeled potatoes, steamed until tender (leftovers may be used), 1/2 c. soy or cashew milk, 1 1/2 tsp. onion powder, 1 tsp. salt or to taste and 2 to 3 tbsp. vegetable oil, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Mash the potatoes until smooth with the remaining ingredients. Should be moist to form into patties.
Place on a well-oiled baking sheet.
Bake at 400Β° for 20 to 40 minutes, turning once.
Pancakes should form a brown crust.
Serve with fresh parsley and tomatoes. A complement to tofu.
