Fish Curry
Fish Curry is an moderately easy dinner. Made with 1 1/2 lb. catfish filet (2-inch pieces), 1 medium tomato, chopped, 1 medium onion, chopped, 2 cloves garlic, chopped and 2 tbsp. olive oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In an open saucepan, heat oil and add onions for 1 minute and add garlic.
On medium heat, stir until tender.
Add tomato and stir for 3 minutes.
Add spices and tomato sauce.
Cook for 3 to 4 minutes.
Stir in sour cream and on low heat, cook for 3 minutes.
Add fish; stir gently for 5 minutes.
Cover and cook for an additional 15 minutes.
Serve over white rice.
