Fruit and Nut Summer Slaw
Fruit And Nut Summer Slaw is an moderately easy dinner. Made with 1 (11 oz.) can mandarin oranges, 5 c. finely shredded cabbage, 1 c. thinly sliced celery, 1/2 c. raisins or chopped dates and 1 large banana, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Drain oranges, reserving syrup.
In a serving bowl, mix together oranges, cabbage, celery and raisins.
Slice banana and dice apple; combine with mandarin orange syrup and lemon juice. Pour over banana and apple, stirring to coat to prevent darkening. Then, with a slotted spoon, remove fruit and add to slaw along with nuts.
Combine 2 tablespoons of the juice mixture with yogurt and salt.
Blend until smooth.
Pour over salad and mix gently. Sprinkle with poppy seed.
