German Hot Potato Salad uses skin-cooked potatoes, crisp bacon, onion, flour, cider vinegar, celery seed, parsley, and a warm sweet-sour dressing. It is tossed gently and served warm with roast beef, ham, or sausage.

Cook potatoes in skin until tender.
Cool, peel and thinly slice.
Fry bacon until crisp.
Add onion and cook one minute. Blend in flour, salt, sugar and pepper.
Add vinegar and water. Cook 10 minutes, stirring well.
Pour over sliced potatoes.
Add celery seed and parsley.
Toss gently.
Serve warm.
Yields 6 portions.
Great served with roast beef or baked ham.
