Grandpa Nystrom's Swedish Hotcakes
Grandpa Nystrom'S Swedish Hotcakes is an moderately easy Swedish dessert. Made with 6 eggs, beaten until fluffy, 1 qt. milk, 1 c. flour, 1/2 tsp. salt and 1/2 c. oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 425Β°.
Melt butter in the oven in an ovenproof dish.
I use glass pie pan.
Mix ingredients in bowl.
When butter is melted, pour in batter.
Bake for about 15 to 20 minutes until golden brown and puffed.
Sprinkle with powdered sugar and lemon. We top with fresh fruit, too.
Serve immediately.
Serves one or two.
