Greek Cabbage Soup
Greek Cabbage Soup is an moderately easy Greek soup you can prepare in about 2 hours 16 minutes. Made with c. chopped onion, . olive oil, qt. water, . tomatoes, peeled and chopped and . cabbage, shredded, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Saute the onion in the oil 5 minutes.
Add the water; bring to boil.
Mix the tomatoes, cabbage, salt and pepper. Bring boil again and cook over low heat 1 1/4 hours, or until cabbage is tender.
Taste for seasoning.
Stir in the parsley.
Serve with sauteed bread.
Beef bone or ham bone or chunks may be added for richer taste.
Also soup is very good if served with melted Gruyere or Mozzarella cheese on top with toasted croutons.
