Healthy Vegetable Stew
Healthy Vegetable Stew is an impressive soup you can prepare in about 1 hour 10 minutes. Made with c. sliced onion, c. diced raw potatoes, (15 oz.) can kidney beans, drained, c. uncooked rice and c. sliced celery, this recipe delivers authentic, satisfying flavors. Arrange onion, potatoes, kidney beans, uncooked rice and celery in layers in order listed in a covered casserole sprayed with Pam.
Preheat oven to 325Β°.
Mix spices and tomato sauce well and pour over stew layers in casserole.
Cover and simmer 1 1/4 hours or until potatoes are tender.
Do not stir; but check occasionally to be sure it does not boil dry.
