Hot German Potato Salad
Hot German Potato Salad is baked after being tossed with a thick celery-onion bacon dressing. Water, vinegar, flour, sugar, salt, and pepper make the sauce, while cooked potato slices and crumbled bacon turn it into a warm casserole-style salad.
Cook the bacon, drain it, and return about 1/4 cup drippings to the skillet.
Add the celery and onions and cook for 1 minute.
Blend in the flour.
Stir in the water and vinegar and cook, stirring constantly, until thick and bubbly.
Stir in the sugar, salt, and pepper.
Pour the hot dressing over the potatoes and crumbled bacon and mix lightly.
Cover and bake at 350 F for 30 minutes.
