Low-Fat "Not Fried Rice"
Low-Fat "Not Fried Rice" is an moderately easy dinner. Made with 1/2 c. finely chopped onion, 1 tsp. liquid butter buds or chicken broth, 2 c. canned fat-free chicken broth, 1 tbsp. sherry or cooking sherry and 1 tbsp. reduced sodium soy sauce, this recipe delivers authentic, satisfying flavors. Coat medium saucepan with Pam cooking spray.
Place over medium heat until hot.
Add onion and saute in liquid Butter Buds or chicken broth for 2 minutes.
Add 2 cups chicken broth and next 3 ingredients; bring to boil.
Stir in rice and cover.
Reduce heat and simmer for 25 minutes or until rice is tender and liquid is absorbed.
Remove from heat and stir in green onions and pine nuts.
Makes 6 (1/2 cup) servings.
