Oatmeal Muffins
Oatmeal Muffins is an moderately easy dinner. Made with 1 c. quick rolled oats, 1 c. buttermilk or sour milk, 1/3 c. shortening, 1/2 c. brown sugar and 1 egg, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 400Β°.
Soak oats in buttermilk (can use sweet milk with the addition of 1 1/2 tablespoons vinegar).
Stir for 1 hour.
Mix shortening, sugar and egg.
Sift flour, soda, baking powder and salt.
Stir oats mixture.
Add dry ingredients. Fill muffin tins and bake.
Makes 12 muffins.
