Piada Dei Morti
Piada dei morti is a sweet All Souls flatbread from Romagna, enriched with wine, raisins, nuts, and a glossy honeyed top. Unlike savory piadina, this version is baked as a low round cake and finished with almonds, walnuts, pine nuts, and syrupy shine.
π Recipe adapted from Wikidata (Dessert)
Soak raisins in warm wine or saba until plump.
Mix flour, sugar, yeast, milk, oil, salt, and the soaking liquid into a soft dough.
Fold in the raisins and some of the nuts, then press the dough into a low round.
Scatter almonds, walnuts, and pine nuts over the top and let the dough rise until slightly puffy.
Bake until browned and brush with warm honey while still hot.
