Pork Fried Rice
Pork Fried Rice is an moderately easy dinner. Made with 1 (5 oz.) boneless pork chop, diced, 1/2 c. diced carrots, 1/2 c. frozen tiny english peas, thawed, 1/4 c. chopped onion and 2 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute first 5 ingredients in butter in a large skillet 3 to 4 minutes or until pork is cooked.
Remove from skillet and set aside.
Heat rice in skillet until thoroughly heated.
Push rice to sides of skillet forming a well or nest in the center.
Pour egg into well and cook until set, stirring once.
Stir rice into eggs. Add the vegetables and remaining ingredients.
Stir well.
Yields 4 to 6 servings.
