Potato and Pea Curry
Potato And Pea Curry is an moderately easy dinner. Made with 1 tsp. margarine, 4 1/2 oz. pared potatoes, cut into 1/2-inch cubes, 1/2 c. canned italian tomatoes, crushed, 1/4 c. fresh or frozen peas and 3/4 tsp. curry powder, this recipe delivers authentic, satisfying flavors. In small skillet, heat margarine until bubbly and hot; add potatoes and tomatoes and saute for 5 minutes.
Add peas, curry powder and salt, then stir in water.
Cover and let simmer, stirring occasionally, until potatoes and peas are tender, about 25 minutes (if necessary, add more water to prevent sticking). Makes 2 servings.
