Potato Pancakes
Potato Pancakes is an easy dinner. Made with 2 or 3 c leftover mashed potatoes, 1/4 c onion, 2 tbsp butter, 1 egg-beaten and approximately 1/4 c flour to thicken, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion in butter until tender, add to mashed potatoes. Add beaten egg and blend well.
Add flour until good consistency for pancakes. Heat skillet until hot. Place flour in saucer and add potato mixture to coat.
Fry until golden brown, turning once.
