Potato Pancakes
Potato Pancakes is an moderately easy dinner. Made with 6 to 8 medium potatoes, 1 medium onion, 1 clove garlic, 1 egg and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Peel and grate potatoes, onion and garlic.
(I use a blender.) Combine all ingredients in bowl, stirring in egg, flour and seasonings.
Use approximately 1/3 cup batter per pancake.
Fry in skillet on medium-high temperature until edges are firm and starting to brown.
Turn over and repeat on other side. Serve with butter, sour cream or applesauce.
Makes 8 to 10 (4-inch) pancakes.
