Potato Soup
Potato Soup is an moderately easy dinner. Made with 1/4 c. margarine, 1 large onion, chopped, 2 celery stalks with leaves, chopped fine, 1/4 c. flour and 3 c. water, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Melt margarine in large saucepan.
Add onion and celery. Cover and cook over medium-low heat until tender (15 minutes). Stir occasionally.
Blend in flour.
Add water, potatoes and salt; stirring constantly (increase heat).
Bring to a boil, turn down and simmer 30 minutes or until potatoes are done.
Stir occasionally.
Add milk, heat but do not boil (will curd).
