Roast New Potatoes With Garlic And Rosemary is an easy dinner. Made with 16 small new potatoes, 1/4 c. good olive oil, 2 cloves garlic, minced, 1 tbsp. chopped fresh rosemary or 1 tsp., dried and crumbled and salt and fresh ground pepper to taste, this recipe delivers authentic, satisfying flavors. Heat oven to 425Β°.
Scrub new potatoes well.
If they're large, cut them into halves or quarters.
Combine olive oil, garlic and rosemary and salt and pepper to taste in bowl.
Add potatoes and toss until coated.

Roast, uncovered, until crisp on the outside and tender inside, about 20 minutes.
