Sauerkraut Salad
This Sauerkraut Salad rinses canned sauerkraut, then marinates it with green pepper, onion, celery, celery seed, oil, vinegar, water, and sugar. After a full day in the refrigerator, the salad becomes mellow, crunchy, and pleasantly sweet-tart.
Rinse the sauerkraut under cold water and drain it very well.
Combine the sauerkraut, green pepper, onion, celery, and celery seed in a medium bowl.
In a separate bowl stir together the oil, water, vinegar, and sugar until the sugar dissolves.
Pour the dressing over the sauerkraut mixture and toss thoroughly.
Cover and refrigerate for 24 hours.
Stir before serving chilled.
