Southern-Style Jambalaya
Southern-Style Jambalaya is an moderately easy dinner. Made with 1/2 lb. boned chicken breasts, cut into pieces, 2 tbsp. butter or margarine, 12 oz. polish sausage, sliced (kielbasa), 1 small green pepper, diced and 1 small onion, diced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook and stir chicken in hot butter in large skillet until lightly browned.
Add sausage, green pepper, onion and celery; cook until vegetables are just tender, about 5 minutes.
Mix in tomatoes and water; bring to a full boil.
Stir in rice, salt and hot pepper sauce.
Cover; remove from heat.
Let stand 5 minutes. Fluff with fork; sprinkle with parsley.
Makes 4 servings.
