Spinach-Cheese Chicken Rolls
Spinach-Cheese Chicken Rolls is an moderately easy dinner. Made with 6 chicken cutlets, 2 eggs, beaten, 1 c. flavored bread crumbs, 2 (10 oz.) pkg. frozen spinach, chopped (1 pkg. could be used, too) and 2 tbsp. olive oil, this recipe delivers authentic, satisfying flavors. Dip cutlets in egg and then bread crumbs; set aside.
Cook spinach or microwave and drain well.
Add oil, garlic and 8 ounces of the Mozzarella cheese.
Grease bottom of oblong dish with 1 tablespoon of butter.
Place approximately 2 tablespoons of spinach mixture at thin end of cutlet.
Roll and place seam side down.
Drizzle remaining butter over stuffed, rolled cutlets in dish.
Place in 350Β° oven for 30 to 40 minutes.
Remove pan from oven.
Place remaining Mozzarella on cutlets.
Bake another 5 minutes.
Yields 4 servings.
