Sweet Potato-Cashew Bake
Sweet Potato-Cashew Bake is an moderately easy dinner. Made with 6 medium sweet potatoes (2 lb.), 1/2 c. packed brown sugar, 1/3 c. broken cashews, 1/4 tsp. ground ginger and 1 (8 3/4 oz.) can peaches, sliced, this recipe delivers authentic, satisfying flavors. Prepare and cook sweet potatoes (whole).
Combine brown sugar, cashews, ginger and 1/2 teaspoon salt.
Drain peaches well.
In a 10 x 6 x 2-inch baking dish, layer half each of sweet potatoes, peaches and brown sugar mixture.
Repeat layers.
Dot with butter. Bake, covered, in 350Β° oven for 30 minutes.
Uncover, bake another 10 minutes.
Top with brown sugar mixture after baking. Serves 6.
