Swiss Enchiladas
Swiss Enchiladas is an moderately easy dinner. Made with 2 c. cooked chicken, cut up, 1 c. fresh mushrooms, chopped, 1/4 c. chopped onions, 1/2 c. unsalted cashews and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Saute mushrooms and onions in margarine in skillet.
Add chicken and cashews.
Stir in sour cream and 2/3 cup half and half.
Cook mixture until thickened.
Place chicken mixture along center of tortillas.
Roll up and place, seam side down, in buttered baking dish.
Pour remaining half and half over rolls. Sprinkle with Monterey Jack cheese.
Bake at 350Β° for 30 minutes.
