Place a gallon of thickened sour milk on the stove.
Stir constantly and heat (about 102Β°) until you can press curds of milk together with the hand.
Pour the milk into cheesecloth and thoroughly press out the whey.
Put 2 tablespoons butter in a hot skillet.
Melt, then add the curds, 1 tablespoons soda and salt (approximately 1 teaspoon or according to taste).
Stir with a potato masher. Cook until smooth, then add cream or milk to thickness desired.
Pour into a bowl and it is ready to serve.
