Zucchini-Potato Pancakes
Zucchini-Potato Pancakes is an moderately easy dinner. Made with 3 tbsp. vegetable oil, 2 large potatoes, cooked and mashed, 1 c. saltine cracker crumbs, 1/8 tsp. black pepper and grated parmesan cheese, this recipe delivers authentic, satisfying flavors. Heat oil in large skillet.
In large bowl, combine zucchini, potatoes, eggs, cracker crumbs, salt, basil and pepper.
Stir until well mixed.
Drop by heaping tablespoonfuls into heated oil and cook until brown.
Add more oil, if needed.
Serve with grated Parmesan cheese.
Makes about 18 medium pancakes.
