Asparagus Stir-Fry
Asparagus Stir-Fry is an moderately easy dinner. Made with 1 lb. fresh asparagus, 4 green onions, sliced, 2 c. mushrooms, sliced, 1 tbsp. each: soy sauce and vegetable oil and rice, cooked, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Snap off base of asparagus and snap into 2-inch lengths.
In a small bowl, blend small amount of water and cornstarch.
Stir in soy sauce and set aside.
Stir-fry asparagus and green onions in oil for about 4 minutes, stirring constantly.
Add mushrooms and cook another minute.
Add your liquid and simmer.
Serve over cooked rice.
