Baked Zucchini and Cheese
Baked Zucchini And Cheese is an moderately easy dinner. Heat olive oil in saucepan; saute onions 10 minutes.
Add tomatoes, salt, pepper, basil and garlic.
Cook over low heat 45 minutes.
Taste for seasoning and purée in blender or use a sieve. Slice unpeeled zucchini, then shake in paper bag with flour.
Heat vegetable oil in skillet; cook squash until lightly browned.
In shallow baking dish, arrange as many successive layers as possible of squash, sauce and cheese, ending with sauce and cheese.
Bake in 350° oven 30 minutes.
Serves 4 to 6.
