Beef Chow Mein
Beef Chow Mein is an moderately easy dinner. Made with 3/4 lb. ground beef, 4 tsp. fat, 4 tbsp. onions, chopped fine, 1 1/3 c. celery, thinly sliced and 1 1/3 c. chinese vegetables, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown meat; drain off fat.
Measure fat into pan; brown onion. Add celery, Chinese vegetables, hot water, salt and soy sauce. Simmer 15 to 20 minutes.
Combine cornstarch with cold water; add to mixture.
Cook until thickened, stirring continuously.
Serve 3/4 cup over 1/2 cup rice per serving.
Yield: 4 servings. Carbohydrate 39 g, protein 18 g, fat 12 g, calories 336.
