Broiled Eggplant with Salsa
Broiled Eggplant With Salsa is an easy dinner. Made with 2 to 3 medium eggplants, washed, peeled and sliced lengthwise, 2 to 3 cloves garlic, 1/4 c. olive oil, 8 oz. organic salsa and 1/2 to 1 lb. soy mozzarella cheese (soya kaas), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Baste sliced eggplants with olive oil on both sides and place on ungreased baking sheet.
Bake or broil 2 to 3 minutes on both sides, until supple (do not burn).
Chop soy Mozzarella cheese and garlic cloves.
Combine with the organic salsa.
Spoon 1 to 2 teaspoons of salsa, soy cheese, garlic mixture into sliced, boiled eggplant.
Roll up into round shape and place in ungreased baking dish.
Add remaining salsa on top.
Bake 10 to 15 minutes, until bubbly.
