Chicken Enchiladas
Chicken Enchiladas is an moderately easy dinner. Made with 1 lb. chicken breast, diced (skinless and boneless), 2 cans cream of chicken soup, 1 pt. sour cream, 1 tsp. chili powder and 1 lb. monterey jack cheese, grated, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Fry the onion and the chicken. Mix the chicken, onions, cream of chicken soup, sour cream and chili powder in a large mixing bowl.
Set aside.
Mix the two cheeses together in a bowl.
Lay out tortillas.
Spoon 2 heaping tablespoons of the chicken mixture into the tortillas.
Sprinkle cheese on top.
Roll tortilla. Repeat this step until you have used all the tortillas.
Put the tortillas into a large baking dish.
Pour the remaining mixture over top of the rolled tortillas.
Sprinkle remaining cheese on top.
Cook, uncovered, at 250Β° for 30 minutes.
