Chicken-Veggie Stir-Fry
Chicken-Veggie Stir-Fry is an easy dinner. Made with 1/2 c. miracle whip or miracle whip light dressing, 4 chicken breasts (about 2 lb.) halves, skinned, boned and cut into thin strips, 1/4 to 1/2 tsp. garlic powder, 3 c. fresh cut up vegetables or 1 (16 oz.) pkg. frozen mixed vegetables (broccoli, cauliflower and carrots make a good combination) and 3 tbsp. soy sauce, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Heat 2 tablespoons of the dressing in large skillet on medium-high heat.
Add chicken and garlic powder.
Stir-fry for 3 minutes.
Add vegetables and stir-fry until chicken is cooked through.
Reduce heat to medium.
Stir in remaining salad dressing and soy sauce.
Simmer for 1 minute.
Serve over hot, cooked rice, if desired.
