Stuff each date or prune with an almond or a little blue cheese, keeping the fruit compact.

Brush lightly with Dijon and wrap each piece in a strip of bacon, securing with a small skewer if needed.

Arrange on a rack and broil or bake until the bacon renders and turns crisp at the edges.

Rest briefly, season with black pepper, and finish with parsley before serving warm.
