Frankfurter Pilaf
Frankfurter Pilaf is an moderately easy dinner. Made with 1/4 c. margarine, 1 large onion, minced, 1 c. uncooked rice, 2 1/2 c. hot beef or chicken bouillon or broth and 1/2 lb. frankfurters, sliced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Melt margarine in large heavy saucepan or Dutch oven; add onion and saute until golden.
Add rice and saute until translucent; add bouillon and frankfurters and bring to boil. Cover and simmer over very low heat 20 to 25 minutes, or until rice is tender and liquid is absorbed.
Season with salt and pepper to taste.
