Fried Fresh Corn
Fried Fresh Corn is an moderately easy dinner. Made with 4 slices bacon, 3 c fresh corn, cut from cob, scraping cob to get corn milk out, 1 1/4 c water, 1 tbsp sugar and 1 tsp salt and 1/4 tsp white pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Fry bacon until crisp; drain, crumble and set aside.
Drain all but 2 Tbsp drippings from skillet.
Add corn, water, sugar and pepper. Bring to boil over medium heat. Cover and simmer for 20 to 25 minutes, stirring frequently to keep from burning. Combine cornstarch and 2 Tbsp cold water, stirring until smooth. Stir into corn mixture and boil for 1 to 2 minutes, stirring constantly. Top with crumbled bacon before serving. Make 4 to 5 servings.
