Melt butter in a large covered saucepan.
Saute onion in butter until golden.
Stir in flour, gradually add broth, apple juice, lemon juice, salt and caraway seed, stirring until thickened.
Add potatoes, ham, prunes and bring to a boil.
Cover and simmer 15 minutes.
Add apples, cover and simmer 15 to 20 minutes until potatoes and apples are tender, stirring occasionally.
