Grandma Drake's Ice Cream
Grandma Drake'S Ice Cream is an moderately easy dinner. Made with 2 qt. milk (use cream for richer ice cream), 3 eggs, 1/4 c. cornstarch, 1/4 tsp. salt and 2 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine sugar, salt and cornstarch.
Mix well.
Scald milk (heat just to boiling point), remove from heat.
Slowly add scalded milk to sugar mixture stirring constantly.
Beat eggs.
Add about 1 cup of hot milk mixture to beaten eggs.
Add egg mixture to remaining milk mixture, stirring constantly.
Cook over low heat stirring constantly until smooth and begins to thicken.
Remove from heat.
Add vanilla and cool in refrigerator.
When cool, pour into 1 gallon freezer.
Pack with 4 parts ice and 1 part coarse salt around container.
Turn freezer, add salt and ice as needed. Takes about 30 minutes; 15 minutes in electric freezer.
