Green Chili Enchiladas
Green Chili Enchiladas is an moderately easy dinner. Made with 10 to 12 tortillas, 8 oz. monterey jack cheese, shredded, 1 c. chopped onion, 1/4 c. flour and 1/4 c. oil or oleo, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook tortillas in hot oil (about 15 seconds on each side). Place 2 tablespoons cheese and 1 tablespoon onion on each and roll. Place in flat 9 x 13-inch baking dish.
Saute 1/4 cup onion in oil or oleo. Add flour and stir in broth.
Cook until thick. Add sour cream and chiles. Continue cooking until this is heated. Pour mixture over rolled tortillas. Bake at 425Β° for 20 minutes.
