Green Enchilada Sauce
Green Enchilada Sauce is an easy dinner. Made with 2 sinks full of green tomatoes, 2 heads garlic, 1 handful fresh ground cumin, salt to taste and red chili powder to taste, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Wash tomatoes; quarter and remove all seeds.
Peel garlic.
Put all ingredients in large pot with a quart of water.
Watch pot so tomatoes won't stick.
Add water as needed.
When all tomatoes are tender, take off stove and cool.
Run everything through blender. Return to stove; bring to a boil.
Put in quart jars and process 45 minutes.
Makes 7 to 9 quarts.
