Hot German Green Bean Salad is a warm sweet-sour side with French-style green beans, bacon, sliced onion, vinegar, sugar, and a little reserved bean liquid. It has the same bacon-vinegar profile as German potato salad in a lighter vegetable form.

Fry the diced bacon until crisp.
Remove about half of the rendered fat from the pan.
Add the sliced onion, vinegar, and sugar to the bacon and drippings.
Simmer for 5 minutes.
Drain the green beans, reserving 1/2 cup of the liquid.
Add the beans and reserved liquid to the vinegar mixture.
Heat through and serve hot.
