Juanita's Sicilian Meat Roll
Juanita'S Sicilian Meat Roll is an impressive dinner. Made with 3/4 c. soft bread crumbs, 1/2 c. tomato juice, 2 eggs, beaten, 2 tsp. parsley, snipped and 1 onion, chopped fine, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Combine bread crumbs, tomato juice, eggs, parsley, onion, carrot, oregano, salt, pepper and garlic.
Add to beef and mix thoroughly.
Pat out meat on foil or waxed paper to a rectangle, about 12 x 10-inches.
Leaving a border of an inch around edges, put the ham slices, then sprinkle the Mozzarella.
Starting at the short end, roll the meat mixture, using the foil to lift.
Seal the edges.
Place the roll, seam side down in a 13 x 9 x 2 baking pan. Bake at 350Β° for 1 hour and 15 minutes.
The center will be pink because of the ham.
Place cheese wedges on top and return to oven until cheese melts.
