Lentil Pilaf
Lentil Pilaf is an moderately easy dinner. Made with 2 onions, slice thin, 4 carrots, slice thin, 1 large green pepper, slice thin, 2 tbsp. butter and 10 oz. can chicken broth, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In a saucepan, saute onions, carrots and green pepper in butter.
Add broth and water.
Bring to a boil.
Stir in lentils and pepper.
Cover and simmer 25 minutes.
Add rice and stir well. Cover and simmer an additional 20 minutes until rice is tender. Add canned tomatoes and heat through until liquid is absorbed.
