Microwave Cheese Enchiladas
Microwave Cheese Enchiladas is an moderately easy dinner. Made with 10 to 12 corn tortillas (room temperature), 1/3 c. vegetable oil, 3 c. shredded cheddar and monterey jack cheese, mixed, 1/2 c. green onion, chopped and 1 (6 oz.) can black olives, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Heat oil in pie plate until very hot, about 5 to 7 minutes. Place each tortilla in hot oil to make it more pliable.
Combine mixed cheeses, 1/2 cup green onions and chopped olives in a bowl. Place about 2 tablespoons of this mixture into each tortilla. Roll closed and place seam-side down in an 8 x 12-inch shallow baking dish.
Pour enchilada sauce over top and sprinkle grated Cheddar cheese and 1/3 cup chopped green onion on top.
Microwave at 80% power (Medium-high) for 13 to 15 minutes, turning dish once during cooking.
