Pancakes
Pancakes is an moderately easy dinner. Made with 2 c. sifted all-purpose flour, 2 tbsp. sugar, 4 tsp. baking powder, 1 tsp. salt and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Sift flour with sugar, baking powder and salt into mixing bowl.
Combine eggs, milk and cooking oil; add to dry ingredients. Beat quickly only until large lumps disappear.
If batter thickens upon standing, thin it with 1/4 to 1/2 cup milk.
Pour batter onto hot, lightly greased griddle (for an electric griddle, set at 375Β°).
Bake until bubbles break and edges are cooked. Turn and bake other side.
Yields 16 (4-inch) pancakes.
