Penne Ala Caprese
Penne Ala Caprese is an moderately easy dinner. Made with 1 large tomato, diced, 2 to 3 tbsp. fresh basil or 2 tsp. dried basil, 2 garlic cloves, peeled and minced, olive oil to cover and 1 lb. penne rigate or rigatoni, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix together tomato, basil and garlic.
Add olive oil to cover.
Marinate at room temperature or in refrigerator for at least 2 hours.
Just before serving, cook penne until al dente. Drain.
Rinse with cold water.
Add small amount of olive oil to pasta and stir.
Add pasta to marinated tomato. Bring tomato to room temperature if refrigerated.
Toss with Mozzarella.
Serves 4.
