Picante Sauce (Salsa) is an moderately easy dinner. Made with 25 to 30 medium tomatoes, scalded and peeled, 4 to 5 large onions, chopped, 1 1/2 tbsp. minced garlic, 2 green peppers and 3 jalapeño peppers, this recipe delivers authentic, satisfying flavors. Squeeze juice out of tomatoes.
Save juice.
Grind up everything and put in kettle.
Add the salt, sugar and vinegar. Dilute 1/2 cup cornstarch in tomato juice to make a gravy.
Add when boiling.
Simmer 30 minutes.
Open kettle.
Fill jars and seal.
Makes about 7 to 8 pints.
