Potato Carrot Soup
Potato Carrot Soup is an moderately easy soup you can prepare in about 1 hour 12 minutes. Made with medium potatoes, pared, medium onions, c. cooking water, c. evaporated milk and of salt (celery), this recipe delivers authentic, satisfying flavors. Dice potatoes, carrots and onions and cook in the boiling water with salt until tender, about 15 minutes.
Drain.
Save the water, then rice or mash the vegetables thoroughly.
There should be 1 3/4 cups of cooking water.
If not, add fresh water.
