Smoked Sausage Stew
Smoked Sausage Stew is an moderately easy dinner. Made with 1 lb. smoked sausage, 3 carrots, coarsely cut, 2 to 3 celery stalks (leaves also), coarsely cut, 1 onion, coarsely cut and 1 bay leaf, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preboil smoked sausage to remove a bit of the excess fat and then cut into bite size pieces.
Place sausage pieces in a saucepan.
Fill with water just to cover meat.
Add all other ingredients, except potatoes.
Cook for 1/2 hour, stirring occasionally.
Add potatoes and cook until soft.
Add salt and pepper to taste.
Serve with bread.
